A great meal that can be prepared ahead of time!


Serves: 8 people


  • 10 Uncooked Lasagna Noodles
  • 2 Cans (14.5 OZ Each) Diced Tomatoes (with Green Chiles, optional), drained
  • 1 bag (12 OZ) cooked, deveined and peeled small or medium shrimp Thawed, rinsed and drained
  • 1/4 white onion, chopped
  • 1-2 cloves of garlic, minced
  • 1 lb smoked sausage (I prefer Jimmy Dean Original)
  • 1 jar (16 OZ) alfredo pasta sauce
  • 2 cups shredded mozzarella cheese
  • 1/2 cup parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 1 pinch of cilantro
  • 2 pinches of black coarse pepper
  • 1 pinch of table salt
  • 2 tablespoons butter

Cooking Instructions

  1. Preheat oven to 350°. Cook and drain noodles as directed on package.
  2. In large saucepan, cook sausage (break apart with fingers or fork) add pinch of pepper and cilantro on sausage.
  3. In medium saucepan, saute shrimp with 2 tablespoons butter. add pepper and onion salt.
  4. Spread 1 cup of tomatoes in ungreased 13x9-inch (3 qt) glass baking dish. Top with 5 noodles, over-lapping as needed.
  5. In large mixing bowl combine remaining tomatoes, shrimp, sausage, alfredo sauce.
  6. Add half of mixture from mixing bowl atop the noodles. add 1 cup of mozzarella cheese. Repeat layers. Sprinkle parmesan cheese over top.
  7. Cover dish with foil. Bake about 30 minutes or until center is hot and bubbly. Uncover, bake additional 15 to 20 minutes longer until cheese is melted. Let stand 15 minutes before cutting. sprinkle with parsley.
